It seems my week has gotten busier than ever. In addition to building the website and getting all its facets up and running correctly, I enrolled in a course to help publish my manuscript. It’s exciting and daunting at the same time!
Dinners were erratic despite publishing my menu for everyone to see—things got shoved around and turned around, and one dinner took a sharp turn and was served for lunch.

I love Asian and Mexican, but confess, I have yet to find the perfect enchilada recipe. I find Asian easier and love the flavors when ginger, mirin, soy, garlic, and sesame oil are combined – I mean, to die for! Pictured above is the Marinated Seared Ahi which can be found here, at Chew Out Loud!

When we recently made a trip to Sam’s Club, I realized that I should never go grocery shopping because EVERYTHING looks good. Walking past one display, I noticed jalapeno cheddar sausages that whispered, ” Take me home, take me home.” So, I did! We’re grilling these for Memorial Day and serving up sides from Spicy Southern Kitchen and Averie Cooks – both look divine, and I can’t wait to try them!

From The Recipe Critic is a delicious salmon recipe in which the fish is seasoned with a rub mix before cooking—or, in our case, grilling, depending on the weather. It is served with a sweet and spicy mango salsa that moves this dish up a notch to super delicious! You can bet I’ll be piling on the salsa!

Another Asian-inspired recipe from The Recipe Critic combines ground beef with carrots, bell pepper, brown sugar, ginger, sesame, soy, and Gochujang Korean chili sauce to create a spicy and aromatic filling served on lettuce leaves. I can’t wait! Pass the tea, please!

Recipes Smiles is a new foodie blog to me, and I can’t think of a better way to get acquainted than with this Boursin Chicken recipe! It’s an indulgent and elegant one-pan meal: creamy orzo and tender chicken in a herby Boursin cheese sauce.

Yay! Dinner out, or I should say a late lunch. We’re spending the day with our friend and neighbor, Barbara, and heading to the little touristy town of Blowing Rock. Known for its “Blowing Rock,” where it’s said that if you toss something off the rock cliff, the wind currents bring it right back!

Juicy, flavorful, and tender cheeseburgers are grilled and served with a special sauce – it’s the perfect time to relax on the patio and enjoy a leisurely meal that America craves! From Jo Cooks, one of my favorite food blogs, my mouth is watering!
