Weekly Menu 6-2-2025

On Friday, we canceled our day trip to Blowing Rock due to bad weather, so I ended up making pasta for dinner. I originally was going to make garlic toast to compliment the pasta, but I have tomatoes, basil, and mozzarella – I guess you know where I’m going with this. Did I mention, more basil than I know what to do with? I decided to make basil pesto which we spread on toasted sourdough followed by seasoned tomatoes, cubed mozzarella, and a drizzle of balsamic and EVOO. Why didn’t I take pics?

In our neck of the woods (literally), we were excited to have a family of geese. The first time I saw them, the babies were small and so cute. I didn’t have time to snag a picture because we drove by in our car. On the Facebook group for our neighborhood, someone else managed to get pics, but it was a couple of weeks later and the last baby, is getting big.
Monday
As summer approaches, grilling becomes a must at our house. Chicken is one of our go-to proteins for grilling. Jessica from How Sweet Eats knows how to make this chicken tasty. First, it’s seasoned with spices and then basted with peach preserves and cider vinegar. The chicken is served along with grilled peach halves to emphasize the peachy goodness of this dish. And if that weren’t enough, the peach salsa has my mouth watering. Peaches, jalapenos, garlic, lime juice, shallot, cilantro, and seasoning are combined for a peachy salsa that transcends this chicken dish.

Last week, we planned a day trip with our neighbor, but the weather was uncooperative. And by uncooperative, I mean, it wasn’t happen’n! Hail, rain, thunderstorms–nah, not the type of touristy, fun day we had in mind, so we postponed it for today with predictions for sunshine and warmer temps. Planning a late lunch, we’re good for dinner, and if we do get a little hungry, well, there’s always cereal…

Wednesday
Like most people, I have a surplus of zucchini this time of year and most likely throughout summer, thanks to our neighbor, Barbara! While I made zucchini muffins for breakfast there is enough zucchini left for two people. Finding this wonderful-looking pasta recipe from Camille Styles, I have to try it! A meal loaded with aromatic garlic, zucchini, pasta, salty Parmesan, citrusy lemon, and pine nuts (for crunch) – oh my! Oh, and did I mention basil…now I’m swooning!

We’re talking sweet and spicy, a treat to our palates, a way to confuse the senses so they stop and savor the flavors. Another recipe from Camille Styles which stopped me in my tracks. Reading hot, honey-glazed salmon was enough to do the trick, but with a coconut crunch – I’m all in on this one!

Everyone needs at least one easy and tasty garlic bread recipe, like this one from A Spicy Perspective. I usually don’t use a recipe, but I thought I’d try this one to see if I could improve my fly-by-the-seat version. You know, the one where you eyeball the ingredients and use what you have on hand. Sometimes I add garlic powder, replacing the real stuff, because I get lazy. Sometimes I add Parmesan cheese, even sour cream; it depends on my mood or how creative or ambitious I feel. And for no reason, I think a chilled champagne would be ideal to serve with the risotto tonight.

I usually substitute another fish for cod. Hubby declared that he dislikes cod, but I managed to grab some while at Sam’s Club. We’ll see if this recipe from Charm Recipes doesn’t convince him otherwise… I love a crispy, crunchy coat to fish, so dredging it first in flour before frying is right up my alley. But the lemon butter sauce drives this fish to a whole other level! I plan to serve it over creamy mashed cauliflower and homemade dinner rolls.
